Black tea is the most fermented (oxidized) form of tea. First the tea is withered or dried over a low heat. Then it is rolled into a form similar to what you see in loose tea. Next and most importantly, the tea is fermented. This is really not fermentation in the traditional sense - instead it is oxidized in a slightly humid environment. This is the key process that brings out the flavor of the tea. It is the tea maker's art to time this just right. Finally it is fired at a higher temperature to fix the flavor of the tea and create the tea that you actually drink. |

Green tea starts with the same plant as black tea - the camellia sinensis bush - but the processing is very different. The leaves are steamed or roasted in order to inactivate the enzymes at the first stage of processing. After this it is rolled, then fired at a high temperature to fix the flavor of the tea. |

Herbal Infusions, fruit based tisanes and floral infusions are not truly tea (Camellia Sinensis) at all. They are dried herbs or fruits. There are only four types of real tea, black tea, green tea, oolong tea, and white tea. For our herbal blends we search the world for the finest available herbs and blend them to have the flavors complement one another. All of our herbal blends contain no caffeine. |

Oolong Tea is a traditional Chinese tea that falls between black and green tea in the oxidation process ranging from 10% to 70% oxidation, yielding many varieties. |

White teas come from the Camellia Sinensis plant, just like green tea, oolong tea and black tea. But white tea is picked early in Spring when all the leaves are still in a bud and covered with fine white hair, hence the name, white tea. Production of white tea is similar to green tea with no fermentation but is even more subtle - the finest white teas are dried in the natural environment and always hand selected. The flavor of white tea can vary from light, sweet, savory or velvety. |

In order to really enjoy the depth and complexity of a true cup of tea, one needs to start with full tea leaves but the great thing about brewing your own tea is that you can make it exactly to your personal taste and mood. Because tea does not come premixed you can create your own tea. You can change it up and experiment with different varieties as well as the brew time, proportions, water temperature (hot or iced) and any additives you might like; sweeteners or milk, or lemon. |
